
Chocolate chia pudding
A fructose free dessert
Makes 1
Ingredients:
3/4 cup almond or coconut milk + 1-2 tbsp extra
3 tbsp chia seeds
3 tbsp cacao powder
3 tsp rice malt syrup
1/2 tsp pure vanilla essence
Pinch of himalayan pink salt
Optional toppings:
Strawberries, raspberries, crushed macadamias, cacao nibs, coconut flakes, toasted flaked almonds, or anything else you choose, really!

Method:
1. Mix coconut milk or almond milk (or a mix of the two) with chia seeds. Leave it to sit in the fridge for 10 minutes or until chia seeds have soaked up the liquid.
2. Transfer mix to a small food processor or blender and add 1 extra tablespoon of coconut or almond milk, cacao, rice malt syrup, vanilla essence and a pinch of Himalayan pink salt.
Top w anything you choose!
