Cacao Orange Truffles 

Makes approx. 15 



1 1/2 cups Walnuts

3/4 cup desiccated coconut 

1 tbsp Coconut oil, melted

2 tbsp Rice malt syrup

1/8 tsp Fine Himalayan pink salt

2 tsp Cacao powder

2 tsp fresh orange juice 

Rind of half an Orange, finely chopped

Plus extra desiccated coconut and cacao powder to roll the truffles in later


1. Put the walnuts in a blender or small food processor and blend until they form a crumb. 

2. Add in the desiccated coconut and blend until combined. Then add the rest of the ingredients, except for the orange rind, and blend again until it all comes together. 

3. Finely chop the orange rind and add to the mixture, mixing through with a wooden spoon or spatula. 

4. Start rolling balls of the mixture and then roll the balls into the cacao powder or coconut, so that they are well covered.  Refrigerate.
