Corn Bread

This recipe is SO good, just sayin'!

 

Makes 1 small loaf, 4-6 pieces 

 

Ingredients 

1/2 cup corn meal l (polenta)

1/4 cup flour (I used rice flour) 

1/4 cup cornflour/starch

1/2 tbsp baking powder

1/4 tsp salt 

1 tbsp rice malt syrup or honey 

1/2 cup milk of choice - I used almond, coconut would also work 

1 egg 

2 tbsp oil - Melted coconut or olive work well

Method

1. Pre heat oven to 200C, grease a small loaf tin with coconut oil or butter, put it in the oven to heat up while you make the bread mix.

2. Mix the dry ingredients in a large mixing bowl

3. Mix the wet ingredients into the dry, whisking well, until very smooth.

ā€‹

4. Take the loaf tin out of the oven (with mitts!) and pour the corn bread batter into the tin. Put it in the oven for 20-25mins. Serve on the side with a good chilli!
