Curried Cauliflower Rice 

Serves 2 as a side 



2 tsp olive or coconut oil  

1 small brown onion 

1-2 cloves garlic (optional)

1/2 head cauliflower, just florets (400g approx) 

1 tsp curry powder 

1/4 tsp turmeric (optional) 

A good pinch of salt and pepper to taste


Optional veggies to add:

1/2 cup Peas

1 finely grated carrot

1 finely grated zucchini 

4-5 brocoli florets 


1. Blend the cauliflower florets in a food processor or blender until it is chopped into small rice/cous cous - like pieces, kind of resembling crumbs.

2. Chop onion and garlic finely, heat the oil in large fry pan, then add and sauté the onion for a few minutes or until translucent. Add the garlic and cook, stirring,  for another minute or so.

 3. Add the cauliflower, curry powder, turmeric, salt and pepper. Mix on medium heat for a few minutes, then add veggies of choice, cooking for a few more minutes. Serve :)
