Guacamole'd kale

Serves 1 as a salad and 2 as a side. 

 

Ingredients

1/2 large avo 

1/2 small garlic clove, finely diced

1/2 tsp ground coriander 

1/2 tsp ground cumin 

1 tbsp lime juice (1/2 a lime)

A good pinch of fine Himalayan Pink salt 

1/4 red onion, finely chopped

2 coriander stalks (use both the stalk and leaves) 

the leaves of 3-4 kale stalks

Method

1. Put avocado, garlic, ground coriander, ground cumin, lime juice and salt in a small bowl, use a fork to mash it, leaving a few chunks of avocado if you like it that way.

2. Chop the onion and add it to the avocado mixture with the chopped coriander stalks and leaves. 

ā€‹

3. Rinse kale leaves and chop them lengthways then across until you have some chunky bits of kale (it should be about 1 1/2 to 2 cups worth)

 

4. Massage the kale into the avocado mixture with your hands.
