Macadamia 'ricotta' or 'feta'


1 cup macadamias 

3-4 tbsp Water 

1 tsp Lemon juice

Pinch salt 


1. Put the macadamias, 3 tbsp of the water, lemon juice and salt in a small blender or food processor.

2. Blend well to combine, if it needs the final tbsp of water add it and blend again. By this stage you should have a ‘ricotta’ like consistency.

3. Put the mix in the fridge and leave it there until you're ready to serve. 

Note: If you want to make feta, do a little less water, and if you want to do a sweet ricotta add 1/2 - 1 tsp pf rice malt syrup or honey instead of lemon juice, and some cinnamon if you want it slightly spiced.
