Salt & Vinegar Sweet Potato Chips
1 small sweet potato
2 tbsp apple cider vinegar
1 tbsp olive oil
a good sprinkle of Himalayan pink rock salt
1. Pre heat oven to 200C
2. Use a mandolin, food processor or very sharp knife to cut thinly sliced rounds of sweet potato, set them aside in a dish and coat well with the apple cider vinegar and some salt, leave for 15-20 mins.
3. Put each sweet potato chip onto some paper towel and pat each one dry (keep the apple cider vinegar mix - you will use it later)
4. Lay some baking paper onto a tray and start putting each sweet potato chips down on the paper, drizzle the chips with olive oil and a good shake of salt, rub them with your hands to make sure they have enough olive oil. Put the tray in the oven for 10mins or so.
5. Take the chips out of the oven and brush them lightly with some of the apple cider vinegar from earlier, and turn each chip over. Put the tray back in the oven and cook for a further 5-10 mins. At this stage you want to keep a close eye on the chips, they burn very quickly.
