Thai Beetroot and Carrot Salad

Serves 1, or 2 as a side



1 large carrot 

1 small beetroot 

1/4 cup chopped coriander (and/or mint - optional) 


Top with:
Toasted cashews
Chill flakes
Sesame or nigella seeds


Optional: Shredded chicken for some added protein. 



Juice of 1 lime (approx 1 tbsp) 

1-2 tbsp tamari soy sauce

1 tsp sesame oil 

1 tsp finely grated ginger 


1. Grate carrot and beetroot into a bowl. 

2. Make the dressing by mixing the lime juice, tamari, sesame oil and ginger. Mix the sauce into the beetroot and carrot mix. 

3. Top with any or all of the toppings!
