Za'atar roasted carrots


4-5 large carrots 

2-3 tbsp olive oil 

Salt and pepper, to season

1/2 a bunch of tyme (about 12 sprigs)

2 tsp sumac

2 tbsp sesame seeds

1/2 tsp Himalayan pink salt 




1. Pre heat oven to 220C

2. Cut the carrots lengthways, then across and into 'chips', then place on a baking paper lined tray. Drizzle with the olive oil and a sprinkle of salt and pepper and make sure they are well coated - you can use your hands to do this. Put the tray in the oven and cook for 20-25 mins. 

3. Meanwhile, make your za'tar by first running your fingers down the thyme sprigs to remove the leaves, place the leaves in a mortar and pestle dish with the sesame seeds, sumac, salt and pepper.Grind well.

4. At the 20 min mark check the carrots to make sure they're not burning - if they are soft sprinkle with the za'tar mix and return to the oven to crisp up for a further 10 - 15 mins.
